Fernando Beteta commands the wine-tasting room at NoMI inside the Park Hyatt with the same authority and quirky asides that Julia Child might have made in her kitchen. "When I smell a wine from the French Burgundy, I picture a farmer and his dog," he says, stomping around the tasting table as if he were a farmer. "You can smell the earth." Mr. Beteta has a keen sense of smell and a finely honed palate, but its also his diverse background that propelled him to be named earlier this year to the Court of Master Sommeliers, of which there are only 171 members worldwide. The up-and-coming wine connoisseur grew up in Guatemala and spent time in the United States before traveling the world. He speaks four languages, studied in Florence and earned a degree at the LEcole Hoteliere de Lausanne in Switzerland. "Its made me more culturally astute," he says. "Ive learned how Europeans think."
