Today we visit El Porron Restaurant in New York City, where Chef Gonzolo "Mr. G" Bermeo shows us how one of the most iconic and delicious dishes of Spain is made. Tip: Tortilla Espanola is one of the national dishes of Spain Tip: Add the potato mixture once the olive oil starts to lightly smoke Tip: The tortilla is ready when it is firm to the touch Trick: Idaho potatoes have a firm texture and wont get mushy Trick: Use a Spanish white onion so that the color of the tortilla is consistent Technique: Keep potatoes in warm water to prevent browning Technique: Remove the potato mixture every 5 minutes and stir so it doesnt burn Tortilla Espanola by Chef Gonzolo "Mr. G" Bermeo PREPARATION: 1. Wash and peel the potatoes. Place the potatoes in bowl with cold water to prevent from browning. 2. Cut potatoes into quarters lengthwise, then cut into 1-inch pieces. 3. Cut half of the Spanish onion into a medium-small dice. 4. Sprinkle the potatoes and onion with a pinch of salt. 5. Heat olive oil in a large sauté pan over high heat. When the oil is very hot (almost smoking), turn off the heat, add the potatoes and onion to the pan, and sauté for 1-2 minutes. 6. Put the pan with the potatoes and onion in a 500 degree oven.
